  • Onion: 1 medium, sliced
  • Garlic: 3 cloves, minced
  • Olive Oil: 3 tablespoons
  • Thyme: 1 teaspoon (or other herbs like rosemary or oregano)
  • Salt: to taste

  • Parmesan Cheese: 50g, grated (optional)
  • Fresh Parsley: for garnish (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 200°C (400°F).
  2. Prepare the Vegetables:

    • In a large mixing bowl, combine the cubed potatoes, sliced mushrooms, and onion.
  3. Season the Mixture:
